Generally speaking, home cooks question why their food never seem to turn out in the expected way. Its either too soggy or bland, even though the "right" ingrdeients and methods have been used.
The truth is that there are ingredients and techniques that must be applied at the right time, in the right amount and at perfect timing to acheive success.
This course discusses the little tricks and tips with regards to selecting ingredients, measuring quantities and timing to apply technques and add ingredients. A large part of the course also discusses good house keeping practices to help ease the stress of cooking, preperation and presentation of food.
This course is for those who already have a basic understanding or experience of cooking West African dishes but are keen to find out details of making the perfect dish every time. Its also ideal for enthusiastic home cooks who have experience in cooking other types of food but would like to gain skills in Cooking West African dishes!
This is a very hands-on course.
The day begins with tea & coffee and verbal exposition, followed by a hands-on cooking session. Learners are supported individually with instant verbal feedback. At the end of the cooking, learners sit down to enjoy the food they made, with a well earned glass of wine or other preferred drinks.
What the Course covers:
- Explanation of why it always goes wrong.
- Good House Keeping practices.
- Explanation of the ingredients precise quantities to use / how to use them.
- Tips and hints on acheiving success.
- Learners will choose from 3 recipe options to cook on the day. This will include an accompaniment of choice.
- Questions & Answer session
- Learners will be supported by tutor and cooking assistant
What the day involves:
- Tea & coffee on arrival.
- All ingredients and materials are provided.
- Classes are a combination of a talk, demo and plenty of hands-on cooking.
- Drinks (wine, fizzy drink or water) are supplied at lunch to accompany the meal you have cooked.
- Any food not eaten can be taken home. Takeaway container provided.
- A handout of your recipe is provided.
- We do the washing up.
