Fried Rice

Ingredients


  • 1 small carrot, finely dice
  • ¼ green pepper, finely dice
  • ¼ yellow pepper
  • 1 small onion, dice
  • 1 handful frozen green peas
  • 1 teaspoon curry powder
  • 1 sprig of fresh thyme or 1 teaspoon of dried thyme
  • 1 handful shrimps or prawns, wash and de-vein
  • 220g of easy cook basmati rice, wash and drain
  • 1 cup of chicken stock
  • 2 seasoning cubes
  • 50ml vegetable or blended olive oil
Another popular rice dish which incorporates the use of vegetables and an assortment of meat or fish pieces.


Preparation Time: 10 minutes
Cooking Time: 30 minutes
Serves: 2 people
Nutritional data: 525kcal per serving

Method:


  1. Boil rice in chicken stock until just soft. Allow to cool for about 10 minutes.::In a large pan or wok, heat oil, and stir fry the onion, carrot and peas. Add curry powder and thyme. Continue to stir fry. Then add green peppers and simmer adding a sprinkling of water.
  2. Add the rice to the frying vegetables one spoon at a time and stir well. Add the prawns last, cover to simmer for 2-3 minutes under high heat. Crush the seasoning cube and sprinkle over the rice. Also add 2 hand sprinklings of water. Stir fry for a further 1 minute. Taste for salt.
  3. Serve hot with grilled spicy chicken.
