Ingredients


  • 350g left over jollof rice
  • ½ green pepper, sliced into strips
  • ½ red pepper, sliced into strips
  • Handfull of bean sprout
  • Handfull of sliced mushrooms
  • Handfull of sliced onions
  • Handfull of green peas
  • 1 seasoning cube
  • 2-3 tablespoons of vegetable oil
A fresh variation of one of Nigerians' most commonly eaten dish.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 2 people


Method:


  1. Heat the oil in a large pan or a wok, until it just begins to smoke. Add all the vegetables one at a time according to their tolerance for heat. Stir very quickly and avoid burning the vegetables. Add the rice last and stir well. Taste for salt; add seasoning cube only if required (depending on the salt level of the jollof rice used.)
  2. Serve with fish or meat of choice. You can also serve as a vegetarian dish.
