Minestrone (with some Nigerian vegetables)

Ingredients


  • Half a cup of Nigerian brown beans (oloyin beans), pick stones & wash
  • Juice of 1 tin of plum tomatoes
  • A variety of seasonal vegetables of your choice - mushrooms, pumpkin leaves (ugwu), broccoli, peas, fresh basil, spring onions, carrots, etc
  • 1 teaspoon pepper soup mix
  • 4 large king prawns (optional)
  • 1 seasoning cube
  • 750 ml of stock
  • 100g of smoked turkey (optional)
  • Drizzle of olive oil
  • Salt
Minestrone is simply a soup made with a variety of vegetables. It is eaten to welcome in the Spring season due to the abundance of fresh seasonal vegetables.

Try this very traditional Western soup using some traditional Nigerian vegetables and spices.

Prep time: 20mins
Cooking time: 25mins
Serves: 2-3 people
Nutrition: 675kcal (approx per serving). Bursting with vitamins and minerals from all the different vegetables.

Method:


  1. Prepare all vegetables and put to one side. Pre boil the beans until just soft.
  2. Pour the tomato juice into a large pot and add the stock. Also add the pepper soup mix and seasoning cube. Then bring to the boil.
  3. Turn down heat and add the vegetables one at a time according to their tolerance to heat. Now add the turkey pieces if using. (Add the prawns last if using).
  4. Drizzle some olive oil and simmer for 5 minutes. Season with some salt and black pepper.
  5. Serve hot.
