Spinach Dodo

Ingredients


  • 1 large plum tomato
  • Quarter of a large onion
  • Mushrooms
  • 1 bunch of spinach
  • 4 large king prawns
  • Some smoked turkey pieces
  • 2 seasoning cubes
  • 1 plantain (just ripe-greenish/yellow skin)
  • 2 tablespoons of olive oil
  • Vwgetable oil for frying
  • Salt
This makes a light evening meal. Simple to make and very appropriate for this and all seasons! Ready in 30 mins.

Prep time:10mins
Cooking time:20mins
Serves: 1 person
Nutrition: 595kcal (approx per serving).

Method:


  1. Pick the spinach leaves from the stem. Do not cut or shred. Wash and allow to drain.
  2. Heat about 100ml of water in a pot, add one seasoning cube and allow to dissolve. Then add the spinach leaves and stir. Allow the leaves to wilt alittle bit, Remove from heat and set aside.
  3. Meanwhile, dice the plantain and fry until golden brown. Set aside.
  4. In a sauce pan, heat the oil, add the diced tomatoes and onions and allow to fry until slighly browned. Add the smokey turkey pieces, the second seasoning cube and stir well.
  5. Allow to sizzle for about 5 minutes then add the prawns, mushrooms and the blanched spinach leaves. Stir well. Finally add the fried dodo. Simmer for a further 5 minutes. Serve immediately
