Bean Fritter Burger

This recipe demonstrates Nigerian cuisine influencing cuisines in other part of the world. In Brazil, this same dish, made from the same basic ingredients, is called acaraje but called akara in Nigeria. Bean fritters served in a bun make a hearty snack or light meal.


Preparation Time: 50 minutes
Cooking Time: 15 minutes

Ingredients:

1. Soak beans in water for 30 minutes. Then rub soaked beans together to peel skin and reveal the white bean shells. Discard bean skin. Blend inner bean shells, onions and tomato. Add water to aid blending. Transfer blend into a mixing bowl and with a wooden spoon, mix for about 2 minutes continuously.

2. Dissolve the seasoning cubes in some hot water (2-3 tablespoons) and add to mixture. Add the tomato paste. Mix. Whisk egg and add. Mix for a further 1-2 minutes. Add shrimps and sliced spring onions. Mix well.

3. Scoop dollops of mixture into hot palm oil or your preferred vegetable oil. Fry for about 2 minutes or until golden brown. Mop excess oil using a kitchen towel.

4. To make the sauce, finely dice 1 small tomato,¼ of red and yellow sweet peppers. Sauté in 50ml of oil, add ½ seasoning cube and 1 tablespoon of ground smoked crayfish.

5. Serve bean fritter in a bun and garnish with watercress and sauce.
