Rice served with green pepper sauce is a must try recipe. Using green peppers to make sauces is not that known in the western world but is popular in Nigeria and some parts of West Africa. The richness of the sauce plus the tenderness of the chicken breasts makes this a very delicious dish.

1. Blend scotch bonnet and green pepper with 500ml of water. Heat oil in a sauce pan until it just starts to smoke. Add chopped onions, add the blend and stir. Add the seasoning cubes and allow to cook for about 5 minutes, turn heat down, add the locust beans and simmer to reduce sauce. Taste for salt.
2. In a sauce pan, add some oil and brown the chicken pieces. Then transfer the sauce to the chicken, a little at a time. Simmer for about 5 minutes to allow the chicken to cook through. Boil some water, add salt and add the rice. Turn heat down and cover the pot tightly. Steam until rice is soft. Serve with the chicken and sauce.
