1. Heat the oil in a large pan or wok, until it just begins to smoke. Add all the vegetables one at a time according to their tolerance for heat. Stir very quickly and avoid burning the vegetables. Add the rice last and stir well. Taste for salt and add seasoning cube only if required (depending on the salt level of the jollof rice used.)
2. Serve with fish or meat of choice. You can also serve as a vegetarian dish.
