This mixed vegetables recipe offers a great way to enjoy some traditional Nigerian vegetables prepared roasted in an oven, the traditional European way!
Preparation Time: 10 minutes
Cooking Time: 40 minutes
1. Place all the vegetable chunks in a baking tray. Drizzle them with olive oil. Now add the suya spice, salt and pepper. Mix the vegetables around with your hands to ensure even distribution of spices.
2. Pre-heat the oven to 190oC (gas mark 5). Place the tray of vegetables in the oven and allow them to cook. Check them every 10-15 minutes, turning them to ensure even roasting. The vegetables should be ready after about 50 minutes of roasting.
